½ Beef

The half cuts of beef typically include the following:

  • T-Bone Steak (~12-16 x 3/4" steaks)
  • Rib Eye Steak (~12-16 x 3/4" steaks)
  • Sirloin Steak (~6-8 x 3/4" steaks)
  • Round Steak (~8 x 1/2" steaks)
  • Chuck Roast (~3-4 x 3 lb, roasts)
  • Shoulder Roast (~3-4 x 3 lb roasts)
  • Rump Roast (~3 x 3 lb roasts)
  • Sirloin Tip (~3 x 3 lb packages)
  • Stew Meat (~4-6 lbs)
  • Short Ribs (~2 x 3 pieces)
  • Ground Beef (~80 x 1 lb packages)
Please note that actual cuts and weights vary by animal.

The farm will provide a cut sheet and help you fill it out; we will turn the cut sheet in when the beef has been hanging 14 days.  You will pay the processor directly when you pick up, normally less than $1.50/lb for standard cut and vacuum package, less if you choose to paper wrap.  If you prefer to pick up at the farm, you may pay the processor over the phone and we will pick up the beef and bring it back to the walk in freezer at the farm and hold for a short time for your pick up convenience.  We can also deliver to certain areas for a small fee.
